Ingredients: for Classic Crème Brûlée Cheesecake
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup melted butter
- For the Cheesecake:
- 4 packages (8 ounces each) cream cheese, softened
- 1 cup sugar
- 2 tsp vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
- For the Brûlée Topping:
- 1/4 cup granulated sugar
- For Garnish:
- Fresh raspberries, blackberries, and mint leaves
Preparation Method:
- Prepare the Crust:
- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom of a springform pan. Chill in the refrigerator while you make the filling.
- Cheesecake Filling:
- Beat the cream cheese in a large bowl until smooth. Gradually add sugar and vanilla, and beat until creamy. Incorporate eggs one at a time, mixing just enough to blend. Mix in sour cream and heavy cream until smooth.
- Pour the filling over the crust in the springform pan. Smooth the top with a spatula.
- Bake the Cheesecake:
- Preheat your oven to 325°F (163°C). Place the cheesecake pan in a large baking dish, and fill the dish with hot water halfway up the sides of the pan (water bath).
- Bake for 55-70 minutes or until set and the center is just slightly jiggly. Remove from the oven and cool on a wire rack.
- Add the Brûlée Topping:
- Once cooled, sprinkle the top evenly with granulated sugar. Using a kitchen torch, carefully caramelize the sugar until it’s golden and hard.
- Garnish and Serve:
- Arrange fresh raspberries, blackberries, and mint leaves on top just before serving.
